Most blogger’s that share recipes for St. Patrick’s Day, share shamrock shakes and mint cocktails. I personally will be checking those out as well, but I wanted to share a little more subtle St. Patrick’s Day recipe.
That St. Patty’s green is in form of pistachios and chives. These little crisps are an in between of the textures of pitas and crackers. Dry, crunchy and full of flavor.
- 1/4 cup chives
- 1 cup flour
- 4 TBS olive oil
- 4 TBS water
- 3 TBS pistachios, roughly chopped
- 2 TBS grated Parmesan cheese
Mix together flour, a pinch of salt and pepper. In another bowl mix together oil and water and then add to flour mixture. Once completely combined, roll dough out onto a floured baking sheet. Make about 1/2 inch thickness. Take pistachios pieces and press into dough, then sprinkle the Parmesan cheese on top. Bake at 320 degrees for 20 minutes, or until golden on the edges. Enjoy!
