Raise your hand if you find it necessary to say croissant in a french accent? As though no one at the bakery is going to understand what delicious pastry you’re pointing at. Yea. Me neither.
Today I share with you a croissant that is my absolute favorite variety. Before deciding to create these, I honestly never knew how simple an Almond Croissant was to make!
- Croissants, pre-made
- Almond slivers
- homemade simple syrup (boil together equal parts water and sugar with your preference of vanilla extract or rum)
- 1 cup almond meal
- 1/2 sugar
- 1 stick of butter
- 2 eggs
To create almond paste mix together sugar and almond meal until combined. Then add in butter and eggs until a frosting like consistency. Cut croissants in half and on the inside of the bottom half, smear the almond paste. Brush the simple syrup on the top side of the top half and sprinkle almond slivers over it. Bake for 10 minutes.
