I’ve been wanting to bake cupcakes with my favorite flavor (and my hubby’s favorite too) cookies & cream, but I also wanted to add something seasonal to the recipe to embrace Fall. So I thought about making a pumpkin spice buttercream to top them and OH MY GOODNESS the Cookies & Cream Cupcakes with Pumpkin Spice Frosting was born. And it’s genius. If I do say so myself 😉
This pumpkin spice buttercream is so delicious, you’ll want to eat it with a spoon. And because I consider Fall the season of baking, all rules go out the window. So I DO eat it with a spoon.
Also, you know that I usually bake (and cook) from scratch, but I actually love yellow cake box mix. Of course because of the convenience, but also because of the taste and moisture the cake always ends up with. So no boujee baking in this recipe! 😉
Cookies & Cream Cupcakes with Pumpkin Spice Frosting
Pumpkin Spice Buttercream
- 1 cup butter, 2 sticks
- 1/2 can of pumpkin puree
- 2 tbs pumpkin pie spice
- 4 cups powdered sugar
- 1 tsp vanilla extract
Cookies & Cream Cupcakes:
- 1 box yellow cake mix (along with the ingredients needed to make this)
- 2 rows of Oreo cookies, crushed and crumbled
Follow instructions on cake mix box. Then mix in crushed Oreo cookies until combined. Pour batter into cupcake pan and bake for 15-20 minutes, or until cupcake is fully baked.
To make pumpkin spice buttercream, make sure the butter is soft. Then cream together butter, pumpkin puree, pumpkin spice and vanilla extract. Then add powdered sugar, one cup at a time, mixing in between.
I like to refrigerate the buttercream for 10 minutes so it gets a little firm and not so melty. Then frost each cupcake with your liking of the buttercream.
