Just about anything can be made even better if done in a cast-iron skillet. Skillet cookies are in a league of their own. I’ve made a cast iron chocolate skillet cookie before and it came out incredible, so I’ve been scheming for some time what would be my next skillet cookie creation and I came up with this S’mores Skillet Cookie.

I did a poll on my instagram a couple of months ago wondering the popularity of half-scratched recipes and received an overwhelming response in favor of them. So this recipe is a perfect example of how magical a dessert can still be when getting a little help and a head start with pre-made ingredients.

In my opinion, as long as there are enough elements in the recipe, the dessert will still have that delicious homemade-taste.

This S’mores Skillet Cookie combines some of my favorite flavors and textures and mimics a s’more in the yummiest of ways. I also think it looks so pretty and rustic-it would look great on a table to serve guests.

S’mores Skillet Cookie


Ingredients:

  • Snickerdoodle cookie mix and it’s required ingredients, I used Betty Crocker
  • 1/4 cup mini dark chocolate chips
  • 1 7oz. jar jet-puffed marshmallow creme
  • 1/2 cup salted butter, room temperature
  • 1 cup confectioners sugar
  • 1 1/2 tsp vanilla extract
  • handful of graham crackers

Directions:

Preheat oven to 375 and grease cast iron skillet. Follow the instructions on the snickerdoodle cookie mix. Once done, pour batter into skillet and spread evenly. Bake for 15 minutes or until you can stick a knife/toothpick into the center and it comes out clean.

While the cookie cools, make the marshmallow frosting. Mix together butter and confectioners slowly until combined. Add in vanilla and marshmallow fluff and mix by hand with a spatula until combined.

Spatula the marshmallow frosting onto the completely cooled cookie. Crush some graham crackers and sprinkle those and the mini chocolate chips on top of the frosting. Present unsliced (because it’s just too pretty!) then slice the skillet cookie into as thick or thin pie slices as you’d like.
