I love a good mojito. But you know what makes a mojito even better, IMO? Swapping out the rum for tequila 😏 To be honest, I named this a Coconut Tequila Mojito, but it’s pretty split down the middle on part mojito/part margarita ingredients. All I know is that it’s delicious and wonderfully light, making it a perfect drink for spring and summertime weather.
Coconut Tequila Mojito
Ingredients:
- 1.5 oz coconut tequila, I use 1800 coconut tequila
- .5 oz orange liqueur
- .5 oz coconut water
- .5 oz freshly-squeezed lime juice
- fresh mint leaves
For pink coconut ice cubes:
- Freeze pink coconut water in round ice cube molds
Directions:
In the bottom of a cocktail shaker muddle the mint in the lime juice. Add in ice and the rest of the ingredients. Shake well and pour into a cocktail glass. Top off with the pink coconut ice cube.
